Chocolate Pudding Recipe | Easy Pudding (without Egg) | No-Gelatin, No-Agar Agar Pudding in 15 mins

Here is an easy to make chocolate pudding recipe in just 15 minutes. Kids will loves this smooth and silky pudding.

Ingredients: Serve - 3 to 4 approximately.

Full Cream Milk – 2 cups (500 ml) 
Sugar – ½ cup 
Cocoa powder - 2 tbsp 
Cornflour – 2 tbsp 
Choco chips – 1 tbsp (optional) 
Butter – 1 tbsp 
Vanilla essence – 1 tsp




                                      

Directions:

Take a pan, add Cocoa powder, Sugar and cornflour.  Give it a mix.

Now, slowly add milk and stir well to avoid lumps.

Now transfer pan to the stove.

Heat the pan in slow flame in till it thickens, stirring continuously.

When it thickens, add butter, choco chips (optional) and vanilla essence.  Give it a quick mix and switch of the gas.

Allow to cool it is warm, stirring in between.

Transfer to serving glass and refrigerate for at least 2 hrs.

Serve chilled.

Tasty chocolate pudding is ready to serve.

Beetroot Halwa / Beetroot Halwa using Jaggery

Beetroot halwa is an easy to make dessert using milk, grated beetroot, nuts, cardamom and in particular using jaggery (without use of white sugar). 

This makes it a healthier choice than a dessert made using sugar. This dish is suitable for all special occasions and even for your routine dessert cravings.

Recipe for Beetroot Halwa
Recipe type: Sweets / Desserts
Cuisine: Indain
Serves - 3 to 4(approximately)

Ingredients:

Beetroot – 3 cups
Milk - 2 cups
Jaggery 1/4 to 1/2 tsp
Cardamom powder – 1 tsp
Cashews  - 10 to 12 pieces each (chopped)
Ghee- 2 to 3 tsp

Directions:
Wash, peel and grate the Beetroots.

Roast the cashews with ghee in a pan and keep aside (reserve some for garnishing).

Heat ghee in a heavy bottomed pan; add the grated beetroots and saute for 2 minutes.

Add milk and cook on medium heat till it evaporates and become thick. After that add jaggery syrup.

Stir well and add cardamom powder, roasted nuts and add the remaining ghee i

Once the halwa starts to leave the sides of the pan, transfer it to serving bowl and garnish with remaining nuts.

Serve warm or chill.

Chocolate Paneer Burfi / Paneer Burfi

Chocolate Paneer Burfi is a delicious, rich milk based sweet.  It is prepared easily using few ingredients which are readily available at home.

I learnt this from my co-sister Guna. She is an expert in preparing sweets and North Indian dishes. 

It was a quick hit in my family when I prepared it the first time itself after learning the recipe from my co-sister. 

You can also try adding saffron instead of cocoa powder. Both tastes yummy.

Recipe for Paneer Burfi / Chocolate Paneer Burfi
Recipe type: Dessert / Sweets
Cuisine: Indian
Serves: 12 to 15 piece(approximately)

Ingredients:

Milk - 2 1/2 cups
Paneer / Indian cottage cheese - 1 1/2 cups
Cocoa powder- 1 1/2  tbsp
Sugar - 1/4 to 1/2 cup (adjust according to your taste)
Cardamom powder - 1 tsp
Ghee - 2 tsp

Directions:

Heat milk in a pan; allow to boil till it reduce to 3/4 of its quantity in volume and looks creamy;

Thaw / Defrost paneer and grind it into a coarse powder using mixer / grinder or you can mash with your hands.


Add sugar, cocoa powder and cardamom powder; mix well and keep aside. 

Keep stirring the milk at regular intervals.

When milk reduced , add the paneer cocoa mixture and mix well.

Add ghee and keep stirring continuously over medium flame until the mixture starts to leave the pan and become a thick mass; switch off the gas.


Pour the mixture into a greased plate and garnish with chopped / grated almonds, pistachios / cashews.

Allow them to cool 10 to 15 minutes and then cut into desired shapes.


Note:

Instead of cocoa powder , you can also add saffron for different taste.

You can also use home made fresh paneer.

Eggless Chocolate Mousse (with just 2 Ingredients) - 5th Anniversary Special!

Time flies very fast! Yes, it's 5 years since I started 'Poornimacookbook'!

This 5 year journey as a food blogger has taught me new recipes, baking, food photography and above all brought me many friends.

I want to thank all my followers, friends and family members for their continuous support & encouragement.

Chocolate mousse is a light, smooth and a delicious dessert from French cuisine.  Though there are several variations in preparing mousse using eggs, gelatin and with too many ingredients, here I have tried it just with two ingredients and without egg. 


 It turned out to be an yummy dessert with perfect texture.

No - Bake Strawberry Cheesecake in a glass

This recipe is my entry for the event "Shhh!!! Cooking Secretly" challenge conducted by Mayuri Patel of Mayuri's Jikoni.   For the month of January, I have paired with Sharanya Pallanisshami of "Sara's Tasty Buds" and the ingredient given by her is Strawberry and cheese.

I have used both the ingredients and prepared a soft, silky & delicious, no-bake strawberry cheese cake.



This creamy no-bake cheesecake served with fresh fruit sauce in individual dishes is perfect for parties and get together. It is easy to make this desert with only few ingredients.


You can try this recipe also in spring foam pan(gelatin or agar agar is must to hold the shape) or shot according to your creativity / convenience. 

It is suitable to relish for any special occasions.

Recipe for No - Bake Strawberry Cheesecake in a glass
Recipe type: Dessert
Cuisine: Western
Serves: 4 to 6 (approximately)

Ingredients:
Biscuit layer:
Digestive biscuits - 8 to 10
Unsalted butter - 2 tbsp

For Cheesecake layer:
Cream cheese -  ½ cup
Heavy Cream - ½ cup
Powdered sugar  - 4 to 5 tbsp(Adjust according to your taste)
Vanilla essence - 1 tsp
Gelatin - 1 tsp(optional)

Strawberry sauce layer:
Strawberries - 8 to 10
Sugar - 2  tbsp
Water - ¼ cup

Directions:

For Biscuit layer:

Crush the biscuits using rolling pin / mixer and mix it with butter until combined to resemble like crumbs.

Divide evenly the biscuit mixture and spoon into bottom layer of the each serving glass. Press it gently.

For cheesecake layer:

In a bowl, sprinkle 2 tsp of un-flavoured gelatin over the ¼ cup of water. Leave for 5 minutes to allow it to become soft.

Take bowl add cream cheese, sugar and vanilla essence; beat until smooth.  Keep aside.

Add heavy cream in a separate bowl and whip it using a electric or hand beater until soft peaks form and gently fold in the cream cheese mixture into the whipped cream.  At last add dissolved gelatin mixture. Mix it gently.

Using piping bag or spoon divide this into serving glass over the biscuit layer.



Cover and place it in the fridge for at least 4 to 6 hours.

Strawberry sauce layer:

Add chopped strawberries, sugar and water in a small pan and allow to cook in a medium flame till it becomes soft.  Switch of the gas and allow to cool completely.  Keep refrigerated.

Before serving, spoon it over the chilled cheese cake layer and serve.


Note:

You can store this dessert in fridge up to 2 to 3 days and enjoy!



The mixing bowl, beater and the cream have to chilled before you start to whip. 


Do not over beat the cream, otherwise it will start to curdle. 

Store this dessert in fridge until ready to serve. 

You can try without using gelatin also. 

Serving size will vary according to the size of the container you are choosing.

Tri colour jelly - Oman (45th) National Day Special

November 18th is a very special day in the Sultanate of Oman; the day which is celebrated as National Day’!

This year, both citizens and expatriates are in upbeat mood celebrating the 45th National Day, as a mark of their love & loyalty to the country and to His Majesty Sultan Qaboos bin Said, the most beloved leader of the country.


The air is festive and the atmosphere colourful, dominated by the national hues of red, green & white.  The display of patriotism and love for His Majesty is on almost every vehicle.  Streets and buildings in Oman have been decked up with national flags & decorative lights to mark the occasion. 

Retail giants have started promotional sales; hotels and airlines have also come up with special offers to join hands in the National Day festivities.  Shops are stocked with National Day mementos.  Sales are at its peak.


Aligning with the national mood in Oman on the eve of the country's 45th National Day, here is a special ‘Tri Colour Jelly’ to try & relish on this special occasion.


Yield - 6 individual cups (large)

Ingredients:

For green layer:
Lemon flavoured jelly packets - 1
( 85 gram)
Green food colour - (optional)
Hot water - 1 cup
Cold water - 1 cup

For red layer:
Cherry flavoured jelly packets - 1( 85 gram)
Hot water - 1 cup
Cold water - 1 cup


For white layer:
Condensed milk - 1 tin
Chinagrass - 5 grams
Water - 2 ½ cups

Fig and Honey Pudding - Eggless(No bake pudding)

This is a delicious, creamy eggless pudding using china grass as a thickening agent.  I am sure every one in your family will love this fig and honey combination in the dessert.   

I learnt this recipe from my neighbour Ganga chechi.   Thank you chechi for the simple and also for tasty pudding recipe.  Try this recipe and give your feedback.

A small on Agar - agar / China grass:

Agar agar (china grass) is a vegetarian substitute for gelatin which is flavorless and odorless, which makes it an excellent thickening agent for cooking especially for desserts like puddings.

Agar Agar is a rich source of calcium and iron, and also very high in fiber.  It contains no sugar and fat free.  It is known for its ability to aid in digestion and weight loss.




Ingredients:

Dried Fig - 100 g
Milk - ½ litre 
China grass - 10gms
Milkmaid / condensed milk - ¾ th to 1 tin full (1 tin = 395 g)
Fresh cream - 150 g
Honey - 2 tbsp

Palada Pradhaman Recipe / Palada Payasam

Palada Pradhaman is one of the traditional payasam varieties in Kerala and also must served dish  in Ona sadhya!

Ingredients:

Rice ada - ½ cup (I used small variety)
Sugar - ½ to ¾ cup 
Milkmaid / Condensed milk - 2 to 3 tbsp
Milk – 4 to 5 cups
Cashew nuts - 15 to 20
Raisins – 5 to 10 pieces
Cardamom powder - 1 to 2 tsp
Ghee - 1 to 2 tbsp

Chocolate Burfi - Using Milk Powder

Chocolate burfi is a delicious and also easy to make sweet treat to share with your loved ones for this diwali especially for kids!

This burfi is perfect to gift your friends and relative; you can store this up-to 4 to 5 days.

Yield: 8 to 10 pieces


Ingredients:

Milk Powder - 1 cup
Sugar - 1/2 cup + 1 tbsp
Cocoa powder - 1 tbsp
Vanilla essence - 1 tsp
Mixed nuts (chopped) - 3 to 4 tbsp
Ghee ( clarified butter) - 2 tsp + for greasing

Umm Ali - Egyptian Bread Pudding

Hi friends, here is my Umm Ali - Egyptian Bread Pudding recipe for Home Baker's Challenge, administered by Priya


This month Rafeeda of The Big Sweet Tooth is hosting the event and she has selected recipes related to Arabic Bakes. I preferred the rich and delicious dessert umm ali; and this recipe is adapted from Sukarah.


Umm Ali is an Egyptian version of baked bread pudding; made with puff pastry. In this recipe puff pastry is soaked in milk or cream and topped with nuts, raisins and coconuts. 

This dessert is rich in calories so have it moderation!

Akkaravadisal / Akkara Adisal (Sweet Milk Rice Pudding)

Akkaravadisal is special south indian sweet which is usually offered as a prasadam to god.

I prepared this sweet for event 
Shhh Cooking Secretly Challenge started by Priya suresh.   I am paired with Shilaja reddy of sahasra recipes  and ingredient given by her was rice and milk.


I am happy to prepare this delicious sweet which is in my to do list for a long time.

Try this delicious sweet which is prepared with milk, rice, dhal (lentils), sugar, ghee, saffron and cardamom powder.

Basundi / How to make Basundi at Home

   Wishing You All A Happy Colorful Holi!

Wow...Poornima's Cook Book has reached 3,00,000 page hits today!!!!   Here I am sharing one my favorite and also a popular cum easy to prepare Dessert / Sweet  to celebrate this special occasion.

Basundi is an Indian dessert popular in Maharashtra, Gujarat and Karnataka. It is a delicious sweet made by boiling milk on low heat until the milk is reduced by half, very similar to rabdi.


Serves - 3 to 4 persons

Ingredients:

Milk - 1 litre
Sugar - 1/4 to 1/2  cup
Nuts - 8 to 10 pieces each (finely chopped)
(almonds, pista, etc)
Cardamom powder - 1/4 tsp tsp
Saffron  - few strands
