Purple Cabbage Poriyal / Purple Cabbage Stir fry - South Indian Style

Purple Cabbage is a low calorie vegetable but with good amount of carbohydrates, fiber, vitamins and minerals.  It's a boon for weight watchers because of its low calorie content.  It's also high in antioxidant level than the normal cabbage.

The deep colour in purple cabbage indicates a richer supply of anthocyanins, which can help lower the risk of cancer, heart disease and many other diseases.

Despite, its health benefits, it's not a common day-to-day vegetable though to an extent used in salads.

Purple Cabbage Poriyal is a successful attempt to include it in our routine diet to reap its benefits for a healthy living and it became an instant hit in our family!

Recipe for Purple Cabbage Stir fry
Recipe type: Accompaniment

Serves: 2 to 3 (approximately)

Ingredients:
Purple cabbage - 2 cups ( shredded / finely chopped)
Onion - 1 ( finely chopped)
Green Chilli - 2

Ginger - 1 tsp(grated)
Red chilli powder - ¼ tsp(optional)
Grated coconut - ¼ cup

For Seasoning:
Oil - 1 tbsp
Mustard seeds - ½ tsp
Urad Dhal - ½ tsp

Cumin seeds -  ½ tsp
Curry leaves - 1 sprig
Salt - to taste

Cabbage Moong Sprouts Stir Fry / Cabbage Poriyal with Moong (green gram) Sprouts

Cabbage poriyal / stir fry is a very common South Indian accompaniment; here I have added moong sprouts in it for its nutritional benefits and to promote its use in our daily food.

Facts about Sprouts / Moong (green gram) Sprouts:

The quality of protein in beans improves when it is sprouted. 

Sprouts are considered to be healthy, as they have good quality protein, anti-oxidants and other vitamins & minerals. 

Eating sprouts will improve digestion and can flush out the impurities; it also aids in detoxifying the blood.

Eating sprouts regularly can help in maintaining a healthy skin.

Sprouts can easily be grown at home and is cheaper too.

You can include sprouts in salads, poriyal / stir fry, gravies, etc.

Cabbage Egg Poriyal / Cabbage Egg Stir Fry (fry) - Indian Style

This cabbage egg poriyal / stir fry is an dry preparation flavored with spices makes a delightful accompaniment to any South Indian main course.

You can also use this as a stuffing for chapathi rolls and sandwich too.




Ingredients:


Egg – 3 to 4
Cabbage - 3 cups(shredded) 
Onions - 1 medium, finely chopped 
Turmeric powder – ¼ tsp 
Red Chili Powder - ½ tsp adjust according to your taste) 
Pepper powder - ½ tsp
Garam masala powder - ¼ tsp (optional) 
Salt – to taste 
Cilantro – 1 tbsp(finely chopped) 

For Seasoning:
Oil – 1 Tbsp
Fennel seeds - ¼ tsp
Cumin seeds - ½ tsp

Directions:


Break eggs in a bowl and beat it thoroughly; keep aside.

Heat oil in a wide kadai; season it with cumin seeds and fennel seeds.

Cabbage Chutney / Side Dish For Idli / Dosa

Here is a fresh, healthy, delicious and easy to make chutney that goes well with South Indian breakfast varieties, such as Idli, Dosa and Uttappam; suitable as an accompaniment for rice, as well.

A smart way of adding vegetable into the diet of your family members; they will not even recognize that there is a vegetable in this chutney!


Serves - 4 to 5 people

Ingredients:

Cabbage - 1 ½ cup (chopped)
Carrot - one small (peel the skin and chop into bite size pieces)
Onion - 1 (finely chopped)
Tomato - ½ (chopped)
Ginger - 2 " piece
Channa dhal - 1 ½ tsp

Red chill - 5
Tamarind - a small piece
Grated coconut - 2 to 3 tbsp
