Black Gram Sundal / Karuppu Ulundu Sundal - Navarathri Special!

Black Gram / Karuppu Ulundu is one of the most healthy and nutritious Legume.  It is very rich in protein, fibre and Vit B.     It is a great energy booster, helps to improve your bone strength and improve your digestion.

Though we are commonly using Urad Dhal (the skinned split black gram) in the preparation of Idli, Dosa, Vada in our daily basis; whole black gram is more nutritious than Urad Dhal.


Here I have tried spicy Sundal using black gram; you can also try sweet version with this.

Try this protein rich Sundal for your evening snack and also it is perfect to be offered as prasadam during South Indian Hindu festivals especially during Navarathri.

Recipe for Black Gram Sundal / Karuppu Ulundu sundal 
Recipe type:Sundal / Seasoned Legumes
Serves:  3 to 4 (approximately)

Ingredients:
Black gram - ½ cup
Grated Coconut - 2 to 3 tbsp
Salt - to taste

For Seasoning:
Oil - 1 tbsp
Mustard - ½ tsp
Urad dal - 1 tsp

Red chilli - 2
Green chilli - 1(finely chopped)
Asafoetida - a pinch
Curry leaves - 1 sprig

Directions:

Wash and soak the black gram overnight or for about 6 to 8 hours.
Pressure cook black gram by adding salt  for 1 or 2 whistle or  until it becomes soft.

Drain the excess water and keep aside .


Heat oil in a kadai; add mustard, after it crackles add urad dhal,red chilli, finely chopped green chilli, asafoetida and curry leaves.

Once the urad dhal is browned, add cooked black gram ; continue mixing till the moisture evaporates, if any.
Finally sprinkle grated coconut; give it a thorough mix . Switch off the gas.
Note:

Adjust the salt and chilli level according to your taste.

You can also add grated ginger while seasoning.

Black Eye Bean Sweet Sundal / Karamani Sweet Sundal / Karamani Vella Sundal - Navarathiri Recipes

Black Eye Bean Sweet Sundal is one of the "easy to make" recipes and a favourite of mine. For those who have seen my previous post of Green Gram Sweet sundal, here is a variation of seasoning with red chillies. Try this; you will like the mild spice taste along with sweet.

Black eye bean / Karamani (in tamil) is a nutritious legume especially high in fibre and rich in B-vitamins. Include in your diet for a healthy living.

Recipe for Black Eye Bean Sweet Sundal
Recipe type: Snacks
Cuisine: Tamilnadu
Serves: 3 to 4 (approximately)

Ingredients:

Black eye bean / Karamani - 1 cup
Jaggery – ½ to ¾ cup

Grated Coconut - 2 to 3 tbsp
Cardamom powder- 1 tsp(optional)
Salt - to taste

For Seasoning:
Oil - 2 to 3 tsp
Mustard seeds - ½ tsp
Red chillies - 2
Curry leaves - few

Black Chick Peas Sundal / Kala Channa Sundal

This is a healthy and traditional sundal preparation using black channa / chickpeas flavoured with aromatic spice powder.  I learnt this from my brahmin friend Divya vijay.

Try this protein rich sundal for kids snack box and also it is perfect to be offered as prasadam during South Indian Hindu festivals especially during Ganesha chathurthi, Navarathri.

Ingredients:

Black channa / chick peas - 1 cup

Grated coconut - 2 tbsp
Salt - as required

Dry roast and  grind:
Urad dhal - 1 tsp
Channa dal - ½ t tsp
Sesame seeds - ½ t tsp
Red chillies - 2 to 3

For Seasoning:
Oil - 1 tbsp
Mustard - 1 tsp
Urad dal - ½ tsp
Asafoetida - a pinch
Curry leaves - 1 sprig

Thenga Manga Pattani Sundal / Beach Sundal

This sundal (seasoned legumes) taste yummy with the sour taste of raw mango.  It is commonly known as Beach sundal, very famous in Tamilnadu.  I know many of you have their own memories when you read the name of the recipe!

Do Check my Navadhaniya Sundal / Thengai Mangai Navadhaniya Sundal in which I have used 9 sprouted legumes with slight variation in seasoning!

Let's move on to the recipe;


Ingredients:

Dry white peas – 1 cup
Grated or chopped raw mango - 3 to 4 tbsp
Onion - 1 (medium sized - finely chopped)
Turmeric powder – ¼ tsp 
Red chilli powder - ½ tsp
Grated coconut – ¼ cup
Coriander leaves - 1 tbsp(finely chopped)
Salt – to taste

For seasoning:
Oil – 1 to 2 tsp
Mustard seeds – 1 tsp
Urad dhal - ½ tsp

Navadhaniya Sundal / Thengai Mangai Navadhaniya Sundal / Mixed Sprouts Sundal - 250th post

This recipe is very special to me as this is my 250th  post.  I also got the Second  prize for this recipe in Navarathiri Special Sundal Competition, organized by Muscat Tamil Sangam.

Try this nutritious sprouts sundal and Enjoy!

Before trying this recipe do read the notes given in the end and then start; I have given some simple methods to prepare this recipe without fuss.



Ingredients:

Mixed sprouts – 2 cups
I have chosen 9 legumes; here it follows


Black Eye Bean
Red whole Masur
Brown channa
Rose Moong
Green gram 
Green peas
White channa 
Horse gram 
Rajma




Raw Mango grated or finely chopped – ½ cup
Lemon juice – juice from ½ lemon

To Grind:
Green Chilies – 6
Fresh grated coconut – ½ to ¾ cup
Ginger – 2 '' inch piece

For Seasoning:
Oil - 1 tbsp
Mustard seeds – 1 tsp
Curry leaves – 1 sprig
Asafoetida - a pinch
Salt – to taste

Channa Sundal / Kondakadalai Sundal / Chick Peas Sundal

Sundal is a healthy snack preparation using legumes( lentils) seasoned with spices and coconut.  It is also an important dish offered as prasadam during Hindu festivals especially during Ganesha chathurthi, Navarathri, particularly in South India.

Kollu Sundal / Horse Gram Sundal

Horse gram is a nutritious legume which is rich in protein, iron and fibre; also helps in lowering cholesterol, weight loss and menstrual problems.

It is known by Hurule in Kannada, Kollu in Tamil, Kulthi in Hindi, Ulavalu in Telugu, Muthira in Malayalam and Horse Gram in English.

Here is a tasty and healthy Horse Gram Sundal / stir fry recipe for this special occasion!


Serves: 3 to 4 persons

Ingredients:

Horsegram - 1 cup
Coriander leaves - 1 tbsp (finely chopped)
Lemon juice - 1 to 2 tsp

To Grind:
Green chillies - 2  (adjust according to your spice level)
Grated coconut - 3 to 4 tbsp
Cumin seeds - 1 tsp

For Seasoning:
Oil - 2 to 3 tsp
Mustard seeds - ½ tsp
Urad dhal - 2 tsp
Curry leaves - few
Salt -  to taste
Asafoetida - a pinch

Directions

Wash and soak the horse gram overnight or for about 5 to 6 hours.

Pressure cook horse gram adding little salt and nearly 2 cups of water for 3 or 4 whistles or until it becomes soft.

Drain the excess water and keep aside (don't dispose this water; you can use this in soup, rasam or sambar for its health benefits).

Grind green chillies, coconut and cumin seeds without water; keep aside.

Heat oil in a Kadai; add all the ingredients under "For Seasoning" one by one.

After it crackles add the grounded paste. Saute this in low flame for a minute till the raw smell goes.

Now add cooked horse gram and salt; continue mixing till it is mixed properly.

Finally, sprinkle chopped coriander leaves and lemon juice; give it a thorough mix .

Horse Gram Sundal is now ready to serve!


Note:

You may also use green gram / pasi payaru to prepare this dish.

Adding coriander leaves and lemon juice lifts the taste of this dish; so don't omit.
