Chocolate Paneer Burfi / Paneer Burfi

Chocolate Paneer Burfi is a delicious, rich milk based sweet.  It is prepared easily using few ingredients which are readily available at home.

I learnt this from my co-sister Guna. She is an expert in preparing sweets and North Indian dishes. 

It was a quick hit in my family when I prepared it the first time itself after learning the recipe from my co-sister. 

You can also try adding saffron instead of cocoa powder. Both tastes yummy.

Recipe for Paneer Burfi / Chocolate Paneer Burfi
Recipe type: Dessert / Sweets
Cuisine: Indian
Serves: 12 to 15 piece(approximately)

Ingredients:

Milk - 2 1/2 cups
Paneer / Indian cottage cheese - 1 1/2 cups
Cocoa powder- 1 1/2  tbsp
Sugar - 1/4 to 1/2 cup (adjust according to your taste)
Cardamom powder - 1 tsp
Ghee - 2 tsp

Directions:

Heat milk in a pan; allow to boil till it reduce to 3/4 of its quantity in volume and looks creamy;

Thaw / Defrost paneer and grind it into a coarse powder using mixer / grinder or you can mash with your hands.


Add sugar, cocoa powder and cardamom powder; mix well and keep aside. 

Keep stirring the milk at regular intervals.

When milk reduced , add the paneer cocoa mixture and mix well.

Add ghee and keep stirring continuously over medium flame until the mixture starts to leave the pan and become a thick mass; switch off the gas.


Pour the mixture into a greased plate and garnish with chopped / grated almonds, pistachios / cashews.

Allow them to cool 10 to 15 minutes and then cut into desired shapes.


Note:

Instead of cocoa powder , you can also add saffron for different taste.

You can also use home made fresh paneer.

Paneer(Indian cottage cheese) Stuffed Braided Bread / Stuffed Braided Bread - Eggless

This recipe is my entry for the event "Shhh!!! Cooking Secretly" challenge conducted by Mayuri Patel of Mayuri's Jikoni.  For the month of May, I have paired with Amrita Iyer of 
"The Food Samaritan" and the ingredient given by her is Paneer and Flour.


I have used both the ingredients and prepared a delicious Paneer stuffed braided bread. Though I am not an expert in baking breads, I always enjoy the opportunity to try my hands on baking. 

Preparing bread at home was quite interesting and my kids liked it very much, especially with their favourite paneer (Indian cottage) stuffing!

Recipe for Stuffed Braided Bread
Recipe type: Breads
Cuisine: Western
Serves:  4 to 6 (approximately)
Makes 2 medium sized bread 

Ingredients:
All purpose flour - 2 cups
Oilve oil - 2 tbsp
Milk - ½ cup
Warm water - 
 ½ cup 
Instant yeast - 1 ½ tsp
Sugar - 2 tbsp
Salt - ¾ tsp

For stuffing:
Paneer - 300 to 400 gms (scrambled)
Capsicum - (1 medium) chopped
Onion - 1 (chopped)
Tomato - 1 (chopped)
Ginger garlic paste - 2 tsp
Turmeric powder - 
Red chilli powder - 1 tsp
Coriander powder - 1 ½ tsp
Garam masala powder - ½ tsp
Coriander leaves - 1 tbsp(chopped)

Spicy Paneer Pasta / Mixed Vegetable Paneer Pasta - Indian style

This Indian style pasta recipe is loaded with Paneer (Indian cottage cheese) and mixed veggies which makes the dish colourful, healthy and tasty.

I have added Indian spices & masala to this dish to give a nice flavour and twist to the recipe.


After I prepared and shared it with my family and friends; everybody enjoyed it.  This dish is perfect to pack for your kids lunch box and picnics.

Recipe type: Main course

Ingredients:

Penne pasta - 1½ cup (Here I have used pasta made from oats flour)
Paneer - 250 grams ( cut into bite sized pieces)
Carrot - 1 small(finely chopped)
Spinach - half bunch(finely chopped)
Capsicum - ½ (finely chopped)
Onion - 1( finely chopped)
Tomato - 1 (big)
Ginger&garlic paste / finely chopped - 1 tsp
Red chilli powder - ½ tsp
Coriander powder - ¾ tsp
Garam masala powder - ½ tsp
Turmeric powder - ¼ tsp
Tomato Ketchup - 2 to 3 tsp(optional)
Coriander leaves - 2 tsp ( finely chopped)
Oil / butter - 1 or 2 tbsp
Salt - to taste

Paneer Bhurji / Scrambled Indian Cottage Cheese

Try this popular, delicious and easy to make Paneer Bhurji / Scrambled Paneer which is favourite for all ages, especially kids!  This can be used as stuffing for sandwiches, parathas or kathi roll to make a wholesome meal.

Try this calcium and  protein rich paneer bhurji; make your kids healthy & happy!



Ingredients:

Paneer - 200 to 250 gms
Onion - 1 (finely chopped)
Tomato - 1 (finely chopped)
Green chillies - 2
Turmeric powder - ½ tsp
Red chilli powder - ¾ tsp
Garam masala powder - ½ tsp
Coriander leaves - 1 tbsp (finely chopped)
Salt - to taste

For seasoning:
Oil / butter - 1 tbsp
Cumin seeds - 1 tsp

Instant Kalakand / Kalakand / Milk cake

Kalakand / Milk cake is a traditional Indian sweet which takes more than a hour to make. I prepared this with 15 minutes using paneer, milk powder and condensed milk to reduce the cooking time; of course, the taste was awesome! Feeling happy!!!!

This is a perfect sweet treat to celebrate Diwali; we all especially my kids love these delicious sweet! 

Try out this quick and easy to prepare sweet that is suitable for all special occasions!


Yield - 8 to 10 pieces approximately
Ingredients:

Paneer - 200 gms
Condensed milk - ½ tin (1 tin = 400 gms)
Milk powder - 2 tbsp
Sugar - 1 or 2 tbsp
Cardamom powder - ¼ tsp
Pistachios - for garnish
Ghee / clarified butter - for greasing the plate

Restaurant Style Palak Paneer / Palak Paneer

Palak Paneer is a popular, delicious, creamy and nutritious gravy from famous Punjabi cuisine!  In this paneer / Indian cottage cheese is cooked in spinach based gravy along with fresh Indian spices.

As my kids are like paneer, I prefer to prepare along with spinach to make their meal more nutritious!  It can be served along with roti / naan / pulao or chapathi.

Ingredients:

Palak – 2 bunches
Green chillies – 3
Paneer – 250 gms (cut into cubes)
Onion – 1 big (finely chopped)
Tomato – 2 (finely chopped)
Ginger garlic paste – 2 tsp
Red chilli powder – ¾ tsp
Corriander powder – 2 tsp
Turmeric powder – ¼ tsp
Garam masala - ½ tsp
Kasurimethi - 1 tsp
Cream – 2 tbsp
Sugar – ¼ tsp
Salt to taste


For seasoning:
Cumin seeds – 1 tsp
Bay leaf - 1
Oil – 1 tbsp
Butter – 1 tbsp

Chilli Paneer Dry

Chilli paneer is a mouthwatering and a popular Indo - Chinese Appetizer / Starter.  It is very easy to prepare; a sure hit for parties and get togethers especially for vegetarians.

My kids just love paneer in any form; It has become one of their favorites now.  Do try and give your feedback.

Ingredients:

Paneer - 2 cups
All purpose flour / Maida - 3 tbsp
Cornflour - 1½ tbsp
Black pepper powder - ½ tsp
Soya sauce - 1 tsp
Ginger Garlic paste - ½ tsp (optional)
Salt - to taste
Water - just to coat
Oil - for deep frying


Other ingredients:
Onion - 1 (chopped)
Capsicum - 
½ (cut into cubes)
Green chillies - 1 to 2 (finely chopped)
Spring onions - 1 stalk ( chopped)
Ginger and garlic - 2
 tsp (finely chopped)
Vinegar - 1 tbsp or to taste
Red chilli powder - ½ tsp
Soya sauce - 1 to 2 tsp
Tomato sauce - 2 tsp
Pepper powder - ½ tsp
Salt - to taste

Oil - 2 to 3 tbsp

Paneer Butter Masala / How to Make Paneer Butter Masala

Paneer butter masala is one of the popular dish of India from Punjabi Cuisine.  This rich, tomato based dish is  favorite for most of the Paneer / Indian cottage cheese lovers  and also commonly ordered food in most of the Indian restaurants.

Try this lip smacking paneer butter masla at home for your family and friends; make them happy!




Ingredients:
Paneer  - 200 to 250 grams
Onions - 1(chopped)
Tomatoes - 3
Ginger garlic paste - 1 tsp
Cashew nuts - 8 to 10
Coriander powder - 2 tsp
Kashmiri red chili powder - 1 to 1
½  tsp
Garam masala - ¼ tsp
Turmeric powder -
Tomato ketchup - 1 tbsp (optional)

Kasuri Methi - 2 tsp
Sugar - ½ tsp
Salt - to taste
Oil & butter - 2 tbsp
Cream - 1 to 2 tbsp

Wheat Paneer Tikka Pizza / Whole Wheat Pizza / Paneer Tikka Piizza / Home Made Pizza

Paneer tikka pizza is really a tasty choice of topping for vegetarians!


Though i have posted Pizza recipe earlier; i want to try a healthier version as my kids are very fond of pizza.

So to improve the nutritional value of pizza, I included half whole-wheat flour and half all-purpose flour to prepare pizza base which gives a soft crust. To improve the flavour you can also add garlic powder / oregano to the pizza base. 

Try and eat this healthy cum fusion pizza without guilty!



Yield - 2 medium sized pizza

Ingredients:

For Pizza Base:

Whole wheat flour - 1 ½ cup
All-purpose flour- 1 cup
Sugar - 1 tsp
Warm water - 1 ½ to 2 cup
Active dry yeast - 2 tsp
Olive oil - 2 tbsp
Salt - 1½ tsp


For Paneer Tikka:

Paneer (cottage cheese) - 250 grams 
Hung yogurt - 1 tbsp 
Lemon juice - 1 tbsp 
Ginger garlic paste - 2 tsp 
Red chili powder - 3/4 tsp to 1 tsp( adjust according to your spice level) 
Coriander powder - ½ tsp 
cumin powder - ¼ tsp 
Garam masala powder - ½ tsp
Salt - to taste 
Oil - 1 tbsp

For Pizza Topping:

Pizza/Pasta Sauce - 3  to 4 tbsp
Onion - ½ (thinly sliced)
Capsicum - ½ (deseeded and thinly sliced)
Black olives - 5 to 6 (Sliced)
Grated mozarella cheese - 2 tbsp or as required to cover the topping
Olive Oil - for brushing the base
Oregano and chilli flakes - to sprinkle on top (optional)

Palak Dosa / Palak Paneer Dosa ( Dosa Stuffed with Spinach and Cottage Cheese)

Here is a crispy dosa recipe with a healthy, delicious stuffing consists of palak and paneer.

Try this; I am sure everyone in your family will like this, especially your kids! 




Ingredients:

For Dosa:

Dosa Batter - 7 to 8 dosa's approximately

For Stuffing:

Palak – 2 bunches
Green chillies –1
Onion – 1 medium (finely chopped)
Tomato – 1 small (finely chopped)
Ginger - 1 inch piece
Garlic - 4 cloves (finely chopped)
Red chilli powder – 
 ½ tsp
Corriander powder – 2 tsp
Turmeric powder – ¼ tsp
Garam masala - ½ tsp
Sugar – ¼ tsp
Salt to taste


For seasoning:

Cumin seeds – 1 tsp
Oil – 1 tbsp

Directions:

Remove stems and wash spinach thoroughly.
