Wheat Dosa / சம்பா ரவை தோசை

Here is a healthy & tasty, aromatic wheat dosa.  It tastes better when served hot and perfect diet for diabetic people!

Ingredients:

Broken Wheat (bigger variety) – 2  cups
Urad dhal – 2 tbsp
Fenugreek seeds – 1 tsp

Red chillies - 3 to 4 
Cumin seeds - 1 tsp
Curry leaves - 5 to 6 leaves
Asafoetida - a pinch
Salt – to taste

Broken (cracked) Wheat Veg Briyani / Samba Rava Briyani / Godhuma Rava Briyani / சம்பா ரவை பிரியாணி

Broken wheat is a healthy alternative for almost all the recipes with rice. It is rich in fiber content and a boon for health conscious people, particularly the diabetic patients.

Here is a health friendly treat using broken wheat for Briyani lovers!!!!

Ingredients:

Broken wheat rava - 2 cups ( fine variety)
Onion - 1( sliced lengthwise)
Tomato – 1 (finely chopped)
Mixed vegetables - 1 ½ - 2 cups( carrots, beans, cauliflower, fresh peas)
Ginger garlic paste - 1 tbsp
Coriander leaves - less than ½ bunch
Mint leaves - less than ½ bunch
Red chilli powder - ¾ tsp
Salt - to taste
Lemon juice – 2 tsp (optional) 


For seasoning: 
Oil – 1 tbsp 
Ghee - 2 tsp 
Bay leaf – 1 
Cinnamon – 1 small piece 
Cloves - 2 or 3 
Cardamom – 1

Rajasthani Lapsi (with Jaggery) / Broken Wheat Sweet

Here is a special recipe on my 175th post; this is also my first post to the International Food Challenge, administered by Saraswathi Tharagaram and Shobana Sekar.

I have selected this traditional sweet of Rajasthan for this challenge. This yummy sweet is easy to make with simple ingredients and a perfect choice for nivedhyam / prasadham that can be prepared in a short time. 



The combination of wheat with jaggery and ghee gives a nice rich taste and moist texture to the this dish.  Try and enjoy this sweet with your family and friends.

Ingredients:

Broken Wheat – ½ cup
Jaggery – ½ cup
Cardamom powder- 1 tsp
Water – 2 cups
Ghee- 2 to 3 tbsp
Cashew nuts - 10
Raisins - 1 to 2 tsp
  


Directions:

Roast the cashews and raisins with ghee in a separate pan and keep aside (reserve some for garnishing).

Broken Wheat Spinach Pongal / Cracked Wheat Pongal / Samba Godhumai Rava Keerai Pongal

A healthy variation to a popular South Indian Tiffin Variety Ven pongal / Milagu Pongal.


Ingredients:

Broken wheat -1 cup
Moong dhal - ½ cup
Spinach - 1 bunch (cleaned and chopped)
Curry leaves- 1 sprig
Black pepper -1½ tsp
Cumin seeds -1 tea spoon
Ginger - 2 teaspoon (finely chopped
)
Green chilli – 1 (finely chopped)
Cashewnuts - 5 to10
Water - 4 cups
Oil -1 table spoon
Ghee – 2 to 3 tsp
Salt - to taste

Sweet / Sakkarai Pongal (using Broken Wheat / Udaitha Godhumai)

"Anaivarukkum yen iniya Pongal Nal Vazhthukkal" "Wish you all a Happy Pongal"

"Thai Pongal" is a harvest festival to thank sun god, celebrated in Tamil Nadu, a southern Indian state.  

On the day of festival, we make Pongal, a sweet dish using rice, moong dhal and jaggery.  Here I have used broken wheat instead of rice for variety and also to increase the nutritive value of the dish.  It tastes good and also remains soft for longer period. 


Ingredients:

Broken Wheat – 1 cup
Moong dhal – ¼ cup
Jaggery – 1 ¼ cup
Cardamom powder- 1 tsp
Water – 3 cups 
Milk – 1 cup
Salt - a pinch
Ghee- 2 to 3 tbsp
Cashew nuts - 10
Raisins - 1 to 2 tsp




Directions:

Fry broken wheat and moong dhal separately in a dry kadai till you get the aroma and Keep aside.

Pressure cook both the ingredients by adding 3 cups of water and 1 cup of milk for 4 to 5 whistles or till it becomes soft.

Roast the cashews and raisins with ghee in a separate pan and keep aside (Reserve some for garnishing).

In a same pan, mix jaggery and water by adding very little water. Boil till the jaggery melts and filter to remove impurities if any.

Again place the pressure cooker on flame; add the melted jaggery to the cooked wheat and dhal mixture. Mix well and add the remaining ghee in between.

Add cardamom powder, raisins and cashews to the above mixture.

Mix well and allow to cook till it comes to semi thick consistency and switch off the gas. Serve hot.

Note:

Colour of the pongal depends on the quality and colour of the jaggery.

Broken Wheat Bisibelabath

Bisibelabath is a famous one pot meal from Karnataka, a Southern Indian state. Usually this recipe is prepared with rice along with lentils (dhal), spices and veggies. Here I want to give a healthier version of this using broken wheat instead of rice.

Broken wheat has nutty flavour, chewy and a delightful taste.  It is nutritious and has a better glycemic index than rice. Broken wheat is considered as a super food for diabetic.  It is an excellent source of fibre and fits in a low fat diet.
Include this in your daily routine for a healthy living. I will try to give more recipes using this.



Ingredients

Broken wheat – 1 cup
Toor dhal (thuvaram paruppu) – ½ cup
Carrot – 1 small (cut into bite sized pieces)
Beans – 6 to 7 pieces (cut into bite sized pieces)
Drumstick – 1 (cut into pieces)
Capicum – ½ (cut into bite sized pices)
Small onion – 15 (chopped roughly)
Tomato – 3 medium sized (finely chopped)
Turmeric powder – ½ tsp
Tamarind – big gooseberry size soaked in 1 cup water
Garam masala powder – ½ tsp
Asafoetida – ½ tsp
Ghee – 1 or 2 tbsp


For tempering:
Mustard seeds – 1 tsp
Curry leaves – 1 sprig
Urad dhal – ¾ tsp
Cashew nuts – 5 to 6 (optional)
Oil – 1 tbsp

For BBB powder:
Red chillies – 6 to 7 (adjust according to your spice level)
Coriander seeds – 4 tsp
Bengal gram dhal – 4 tsp
Fenugreek seeds – ¼ tsp
Cumin seeds – ½ tsp
Grated coconut – 1 tablespoon



Directions

Wash broken wheat and toor dhal and pressure cook by adding 5 cups of water for 4 to 5 whistles along with turmeric powder, asafoetida and salt, till it becomes soft.

once it is done, give a quick mash using a ladle and keep aside.
Now squeeze the soaked tamarind and keep aside.

For BBB powder, dry roast the ingredients by adding one by one.  Add the coconut at last fry and grind altogether.  Keep this aside.

Take a kadai, add oil, season with mustard seeds, after it splutters add the remaining tempering ingredients, one by one.

Once it is done, add small onions and tomatoes with little salt, fry till tomatoes become soft.

Now add chopped vegetables with little water. Allow to cook till becomes soft. Once it is done keep aside.

Place the pressure cooker again in the pan; add Tamarind extract to the cooked broken wheat and dhal mixture. Give it a mix.

Keep fire in a medium flame. Add the cooked vegetable mixture and BBB powder, garam masala powder to wheat dhal mixture.
Mix well; add the remaining ghee and simmer for 5 minutes.  Garnish with coriander leaves and serve hot.

Note:

Diabetic and those who want to have a low fat diet can avoid ghee & cashew and relish.
