Peanut Salad / Peanut Pomegranate Salad

This is a refreshing salad with healthy combination of texture and flavour.  The addition of pomegranate in this salad enriches the taste; so don't skip it.  For extra crunchiness, you can add some walnuts / almonds too.

This is a meal by itself; perfect for weight watchers!  I learnt this salad from my friend Lolita; this peanut and pomegranate combination was really awesome; a great hit in my family.

Recipe for Peanut Salad
Recipe type: Salad
Cuisine:  International
Serves: 3  to 4 (approximately)

Ingredients:

Raw peanuts - 1 to 1½ cup
Pomegranate seeds - ½ cup

Capsicum - 2 tbsp (chopped)
Onion - 1 medium seized, sliced
Tomato - 1 tbsp(chopped)
Cucumber - 1 small(chopped)
Apple - ½ (chopped) 

Walnuts / almonds - 1 tbsp(chopped)(optional)

Salad Dressing:
Olive oil - 2 tbsp
Lemon juice - from 1 lemon
Salt - to taste
Pepper - as required

Directions:

Soak the raw peanuts in water for 5 to 6 hours.

Pressure cook peanuts  by adding salt for 3 or 4 whistle or until it becomes soft.

Drain the excess water and keep aside .

Take a bowl, add cooked peanuts, pomegranate seeds, chopped capsicum, chopped onion,chopped tomato, chopped cucumber and diced apples.



Add the ingredients for salad dressing in a bowl.  Mix well and keep aside.




Pour the dressing over the Peanut mixture and toss it.


Healthy and colourful salad is ready to eat.

Note:

This salad is taste better when serve chilled.

Adjust the amount of all the ingredients according to your taste bud.

Gutti Vankaya Kura / Stuffed Brinjal Curry - Andhra Style

This recipe is my entry to the event "Shhh!!! Cooking Secretly" challenge conducted by Mayuri Patel of Mayuri's Jikoni.   For the month of September, I have paired with Priya Suresh of "priyaeasyntastyrecipes" and the ingredient given by her is Brinjal and Peanuts.

This month we planned to try Andhra Cuisine with the given Ingredients.  So thought of trying a gravy using brinjal / eggpalnt.    When I discussed this with my friend Monisha, she taught me a recipe which turn into a  great hit in our house.  Thank you Monisha for the lip smacking recipe.

This Andhra style brinjal gravy is easy to make and also  spicy, tangy and nutty in taste.    It goes well with rice and chapathi.

Masala Kadalai / Masala Peanuts / Spicy Masala Peanuts

Masala Kadalai / Crunchy and Spicy Masala Peanuts / மொறு மொறு மசாலா கடலை is a spicy and tasty snack to munch any time of the day particularly as a tea time snack and side dish. I used to prepare this often and it has always come out well!

Ingredients:

Raw peanuts - 1 cup
Besan flour / Gram flour / Kadalai Mavu - 4 tbsp
Rice flour - 2 tbsp
Garlic - 8 to 10 cloves
Red chilli powder - 1 tsp (adjust the quantity to suit your taste)
Asafoetida - a pinch
Garam masala - 1/2 tsp

Curry leaves - 1 or 2 sprig
Salt - to taste
Water - to mix
Oil - for deep frying

Peanut Podi (Powder) / வேர்கடலை பொடி

Here is a tasty, easy to make Peanut powder / podi, a variation of  idli milagai podi; that goes well with South Indian breakfast varieties, such as Idli, Dosa and Uttappam.

You can also add this to any veg stir fry / poriyal for different taste.

Ingredients:

Peanuts - 1 cup
Urad dhal - ¼ cup
Channa dhal - ¼ cup
Red chillies - 6 to 7
Asafoetida(Powder) - ½ tsp
Salt - to taste
Oil - 1 tsp


Directions:

Take a kadai; dry roast the peanuts and transfer that into a plate.
