Kit Kat Cake

This cake is perfect for any celebration.  I made this cake for my son's birthday party and it was a big hit!  Idea for this cake came from  my co-sister Nancy Therrien, who prepared a similar cake for her son's birthday last year.

This soft and airy cake recipe is a slightly modified version from of  my Chocolate cup cake recipe which was adapted from Hershey's.

Satisfy your chocolate craving with this yummy chocolate cake.

Ingredients:

All purpose flour – 2 cups
Sugar – 2 cups (powdered)
Baking powder – 2 tsp
Baking soda - 1½ tsp
Salt – ½ tsp
Cocoa powder - ¾ cup
Vegetable oil –½ cup
Egg – 2
Milk – 1 cup
Hot Water-  1 cup
Vanilla essence - 2 tsp

Chocolate Frosting:
Butter - ½  cup
Cocoa powder - ½ cup
Confectioner's Sugar - 3 cup
Vanilla extract - 2 tsp
Milk - ¼ cup (if required)
Salt -  ½ tsp

Others:
Kit Kat Bar - 2 large packets (9x2 )
M&M's - 2 packets (180 grams)
Satin ribbon

Directions:

For the Chocolate Cake:

Preheat oven to 180 deg C; prepare a 9" baking tin and keep aside.

In a  medium bowl, sift together flour, sugar, cocoa, baking powder, baking soda and salt. Keep aside.

In a separate bowl add oil, egg, milk and vanilla essence and blend until it is mixed well.

Mix the dry ingredients into wet mixture and beat on medium until mixed thoroughly. Then, stir in hot water (batter will be thin).

Pour the cake batter into the greased cake tin and bake on preheated oven at 180 deg C for 30 – 35 minutes until a toothpick inserted into center of a cake comes out clean.

Remove from oven and allow to cool completely.

For the Chocolate Frosting:

Sift together the sugar, salt  and cocoa; set aside.

In a large bowl, cream butter until smooth, then gradually beat in sugar and cocoa  mixture.

Blend in vanilla and beat until light and fluffy.  If necessary, adjust consistency with milk.

To Assemble The Cake:

Split the Kit Kat's and keep it ready.

Cut the cake exactly in the middle using knife or thread to divide into two layer of cakes.

Place the one layer of cake on the plate / cake board; spread the frosting generously using your spatula or knife and place second  layer of cake over the first.

Spread the remaining frosting over the second layer and also the sides of the cake.

Once you covered your cake with your frosting; start sticking the Kit Kat's around the cake, pressing gently into the frosting.

Wrap a ribbon around the cake to secure the Kit Kat's and fill the top of the cake with M&M's.

Chill the cake for an hour (this will help to set the frosting).  Now the cake is ready for the party.

To serve:
Remove the ribbon and slice between the Kit Kat bars.

I am sending this recipe to Cutchi's Kitchen 100th post Giveway event.
