Coconut Bun / Dilkush / Coconut stuffed buns / Thengai Bun

This recipe is my entry to the event "Shhh!!! Cooking Secretly" challenge conducted by Mayuri Patel of Mayuri's Jikoni.  For the month of August, I have paired with Sujata Roy of
"Batterupwithsujata" and the ingredient given by her is Coconut and Almond.

I planned to prepare Coconut buns which 
is typically a bread / bun stuffed with sweet filling mainly coconut, nuts, tuitty-fruity, raisins and sugar.

This is i
n my to-do list since long time and my husband's favorite as well; hence I wanted to try this at home and surprise him.  It came out very soft and tasty😋 and the compliments I got made me happy too😃

You should try this delicious bun at home and surprise your loved ones.

Recipe for Coconut Bun / Dilkush / Coconut stuffed buns
Recipe type: Breads
Serves:  4 to 6 (approximately)
Makes 1 large bun

Ingredients:
All purpose flour - 2 cups
Instant yeast - 2 tsp
Milk - ½ cup (Luke warm)
Sugar - ¼ cup
Salt - ½ tsp
Butter - 
¼ cup
Egg - 1(beaten) 
Vegetarians can avoid egg and proceed with the recipe.

For stuffing:
Coconut- 1 cup
Sugar - 3 to 4 tbsp
Almonds - 10(finely chopped)
Raisins-10
Tuitti frutti- 2 tbsp
Cardamom powder - ¼ tsp
Directions:

In a bowl, sprinkle yeast, sugar and warm milk; mix and allow it to stay until frothy for about 5 to 10 minutes. This means yeast is active and ready to use.


Take a wide bowl and add all purpose flour, salt and mix thoroughly.

Make a well in the center of the flour and add the yeast mixture , egg (if using ), butter and slowly start mixing  until the dough sticks together.


Turn the dough out onto a floured surface and knead until smooth.

Knead by hand for 5 to 7 minutes and shape into a ball and set in a lightly oiled bowl.

Cover loosely with a towel or cling film, and keep it  in warm place until doubled in size, about 1 to 1 1/2 hour.

Coconut filling:

Add grated coconut, tuity fruity, chopped almonds, raisins, sugar and cardamom powder in a bowl and mix well.   Keep aside. Your filling is ready.



Punch down the dough and divide the dough into two balls.

Using rolling pin, roll them into a circle with  1/2 “ inch thickness and placed it in greased tray.  Spread the filling over that. 
Cover it with another rolled dough and seal the edges properly so that the fillings doesn't come out while baking.  

Place the sealed buns in warm place for another 30 minutes for raising / proofing.

Preheat oven to 180 degrees C.

Before baking, brush the buns with beaten egg or butter(for vegetarians) for the glossy finish.

Bake at 180 degrees C for about 20 to 25 minutes, until it is browned evenly.

Transfer to a rack to cool thoroughly before slicing.

Using a serrated knife, cut into slices.  Enjoy!


Note:

The baking temperature and time will vary depending on the oven specification and bread thickness.

As fresh coconut is used in this recipe, try to finish it on the same day or keep it in the fridge if there is any leftover.   Reheat in microwave oven before use.

You can also use store bought sweetened coconut flakes.

Beetroot Chocolate Cake

This is a rich and delicious chocolate cake with healthy addition of beetroot.  I just tried adding beetroot for the first time for a healthy bake and to my surprise, it came out very well. 

Beetroot merges very well in the cake that no one in my family recognized the presence of vegetable in this cake!

I have already tried Avacado brownies which gave the confidence to try this cake with beetroot. 

Don't give a second thought, its worth trying!

Beetroot - 1
Dark chocolate – 250 grams
Eggs – 3
Sugar – 1 cup (powdered)
Salt – ½ tsp
All purpose flour - 1 cup
Cocoa powder - ¼ cup
Baking powder - 
½ tsp
Baking soda - ½ tsp
Milk - ½ cup (Add if you feel the batter is too thick)

Healthy Breakfast Muffins

This nutritious and tasty muffins are perfect way to start the day!  As a mom I feel very satisfied when I send this muffins for my kids lunch box as it has wheat flour, oats, carrots, orange, bananas and dry fruits. I have adapted the recipe from Marthastewart.com and made slight changes according my preference.

Whole wheat flour  – 1 cup
All purpose flour - ½ cup
Oats -  1 cup
Vegetable oil / olive oil  - ½ cup
Dark brown sugar - ½ cup
Vanilla essence - 1 tsp
Cinnamon powder -  ½ tsp
Raisins - ¼ cup
Baking powder - ½ tsp
Baking soda - ½ tsp
Salt - ¼ tsp
Egg - 1
Milk - ½ cup 
Carrots(small) - 2 (grated)
Banana - 1 (mashed)
Orange jiuce - ½ cup

Easy Fruit Cake / Easy Christmas Cake (No soaking, No alcohol cake) - 350th Post

This is a perfect cake for those who are in last minute preparation; a perfect alternative for traditional fruit cake / plum cake.  Though this cake doesn't require prior soaking of dry fruits in alcohol, it tastes delicious!  An easy to prepare cake, even for beginners!

This recipe is adapted from joy of baking.

This fruit cake is not only for this season, but makes a best tea time snack. Try out this quick and easy to prepare cake that is suitable for all special occasions!



Ingredients:
All purpose flour - 1½ cups
Brown sugar - 1 cup
Egg - 2
Unsalted butter - ¼ cup
Raisins - 2 cups
Tutti frutti - 1 cup
Vanilla essence - 1 tsp
Orange juice - ¼ cup (optional)
Orange zest - 1 tsp(optional)
Dry ginger powder - 1 tsp
Cinnamon powder - 1 tsp
Clove powder - ½ tsp
Nutmeg powder - ½ tsp
Salt - ½ tsp
Baking soda - 1 tsp
Water - 1 cup (240 ml)

Gingerbread Cupcakes - Christmas Special


Ginger bread cupcake is delicious and full of flavours with ginger, honey / molasses, cinnamon and nutmeg! 

This recipe is adapted from Sally's baking addition.  This is a perfect sweet treat to celebrate Christmas; we all especially my kids love these delicious cupcakes!

Yield: 12 cupcakes

Ingredients:

All purpose flour – 1½ cup
Butter - ½ cup
Dark brown sugar - ½ cup
Honey / molasses / maple syrup - ½ cup
Vanilla essence - 1 tsp
Baking powder - ½ tsp
Baking soda - ½ tsp
Salt - ¼ tsp
Egg - 1
Milk - ½ cup
Cinnamon powder - 1 tsp
Freshly ground ginger - 2 to 3 tsp
Nutmeg powder - ½ tsp 



Whipped cream Frosting:
Whipping cream - 1 cup
Icing sugar- 2 to 3 tbsp
Vanilla extract - ½ tsp
or
lemon juice - 1 tsp

Avocado Brownies

Can you imagine Avocado in a brownie? Yes, I have added mashed avocado! This healthy twist to chocolate brownie is simply amazing!

No one in your family will guess what is the secret & healthy ingredient behind this moist and delicious brownie!

Try this healthy cake, less calorie brownie without guilt!


Ingredients:

Avocado - 2
Dark chocolate – 250 grams
Eggs – 2
Sugar – 1 cup (powdered)
Salt – ½ tsp
All purpose flour - 1 cup
Cocoa powder - ¼ cup
Baking powder - ½ tsp
Walnuts - 5 to 10 no chopped (optional)
Milk - ½ cup (Add if you feel the batter is too thick)

(Tri-colour) Check Board Cake


This Check Board Cake recipe comes on this special occasion of 'One Million Page Views'.

I prepared this cake for my elder son Deepak's birthday; I always prefer to prepare the cake myself, for special occasions at home.

Traditional Check Board Cakes comes only with two colours; brown and white. I tried out this cake with the three colours and it came out well!

My friends and kids in the party were surprised to see the tri-colour pattern in the cake.

Ingredients:

Eggs - 6
Milk - 2 ½ to 3 cups
Vanilla essence - 3 tsp
Cake flour - 6 cups
Sugar - 3 cups (powdered)
Baking powder - 3 tbsp
Salt - 2 tsp
Unsalted butter - 1½ cup
Choco chip - 85 grams
Pink / red food colour - 1 tsp


To prepare Cake Flour:

You need to remove 2 tbsp of all purpose flour from the cup and replace 2 tbsp with cornflour.  Cake flour is ready.

Baked Date & Chocolate Rolls / Breads (Eggless)

Here is a healthy, soft Bread Roll / Braided Bread stuffed with tuitty fruity, chocolate chips and dates (you can also add nuts with this).

Preparing bread at home is quite interesting and easy; even beginners can try this without second thought. I have adapted the recipe from Treat n Trick, one of the famous blogs for baked goodies. 

Actually this recipe is given for Bread Roll, but I also tried the Braided Bread, out of my interest and it came out very well. Every one liked it as well.

Chocolate Crinkle Cookies

Chocolate Crinkles are deliciously soft, brownie-like cookie that are coated in a generous coating of confectioners sugar. The name "Crinkle" probably refers to how the powdered sugar "crinkles" or "cracks" as the cookies bake, revealing a little of the chocolate underneath. This recipe is adapted form Simply recipes.

This cookie is perfect for to celebrate Christmas; we all especially my kids love these delicious snack!

Yield: 18 to 20 cookies medium sized cookies

Ingredients:
All purpose flour – 1 cup
Cocoa powder – ½ to ¾ cup
Baking powder – 1 tsp

Instant Espresso powder – ½ tsp(optional)
Cinnamon powder - ½ tsp (optional)

Salt – ¼ tsp
Sugar – ¾ cup
Eggs – 2

Vegetable oil – ¼ cup
Vanilla essence – 1 tsp


For coating:
Confectioner's (Powdered or Icing) sugar  – ½ cup

Chickpea Crackers / Savory Crackers

Hi friends,  Here is my Chickpea Crackers for October Month's Home Baker's Challenge.
