Pan fried Tandoori Chicken / Tandoori Chicken Stove Top

Tandoori chicken is a delicious non-veg starter and one of the most popular dishes from India. This mouthwatering variety is a sure hit for parties (of course, for non-vegetarians).

 This recipe is to make Tandoori Chicken without using Oven or Grill, but with a Pan.

Try this out and enjoy!



 Ingredients:

Chicken legs / Drumsticks – 8 to 10 pieces 

First marination: 
Salt – As required
Lemon juice - 1½ tbsp 

Second marination: 
Ginger-garlic paste - 1½ tsp 
Turmeric powder - ½ tsp 
Kashmiri Red Chilli Powder – 1 to 1½ tsp
Corriander powder - 1 tsp 
Garam masala powder - 1 tsp 
Yogurt - 2 tbsp 
Kasuri methi - a big pinch 
Butter – 1 or 2 tbsp 
Salt – If needed 
Red food colour - a pinch (optional) 


Directions:

Clean the chicken legs and make slits on each piece. Rub it with salt and 1 tbsp lemon juice; Keep aside for 15 mins.

To marinate; mix yogurt / curd (without water), turmeric powder, red chili powder, coriander powder, ginger garlic paste, garam masala powder.

Apply this mixture over the chicken pieces and allow to marinate for 4 to 5 hours, preferably overnight in refrigerator.

Heat butter in a pan, once it started melting Place the chicken pieces over that.

Allow to cook for 2 to 3 minutes and flip the pieces; again cook for another 2 minutes.

Close the pan with the lid and allow to cook in low to medium flame for 10 minutes.

Take out the lid and allow to cook till the water dries up. 

Tandoori Chicken is ready to serve now.

Serve with onion rings and lemon wedges.

Note:

Adjust spice level to suit your taste.

Mutton Biriyani / Mutton Dum Biriyani - Tamilnadu Style

Mutton biriyani is an aromatic and delicious rice variety among non veg lovers.  In our family we  prefer Tamil nadu style biriyani than other biriyani preparations, especially for the method of rice cooked along with gravy and spices.

Ingredients:

To pressure cook mutton:
Mutton - ½ kg
Turmeric pwd - ¼ tsp
Red chilly pwd - ½ tsp
Ginger garlic paste - 1 tsp
Oil - 2 tsp
Water to cook the mutton - 2 to 3 cups

For biriyani:
Oil + ghee(clarified butter) - 4 to 5 tbsp
Cinnamon - 1 inch piece
Cloves - 4
Cardamom - 3
Bay leaf - 2
Onion - 1 big(sliced lengthwise)
Tomato - 1(big) finely chopped)
Ginger garlic paste - 1 tbsp
Green chilli - 2(slit lengthwise)
Curd - 2 tbsp
Red chilli powder - ½ to 1 tsp
Garam masala powder - ½ tsp
Fresh mint and coriander leaves - handful
Basmati rice - 2 cups
Water to cook rice
Salt to taste

Spicy Mutton Liver Fry / Mutton Liver Varuval / Eeral Varuval

This Goat liver fry is a delicious, spicy dry preparation which is a treat for organ meat lovers!

Goat liver is excellent source of protein and rich in iron & vitamin A. Though it has many nutritional benefits, moderation is advised due to its high cholesterol content.

Ingredients:

Mutton liver - 500 g
Small onion - 15 / Big onion - 1(finely chopped)
Ginger - 1 inch piece, Garlic - 10 to 15 cloves (finely chopped and crushed)
Turmeric powder - ½ tsp
Red chilli powder - 1 to 1½ tsp
Corriander powder - 1½ tsp
Pepper powder - 1 tsp
Salt - to taste
Corriander leaves - 1 tbsp (finely chopped)

For Seasoning:
Oil - 1 tbsp
Fennel seeds - 1 tsp
Curry leaves - 1 sprig
