Mint Lassi / Salted Mint Lassi / Pudhina Lassi

Lassi is one of the popular summer drink in India, prepared by using curd/ yoghurt, sugar / salt. It is very easy to make and healthy too. Addition of mint in this drink gives a added flavor and also increases the nutritive value. You can adjust the consistency by adding water, according to your preference.

Recipe for Mint lassi
Recipe type: Beverages
Cuisine:  North Indian 
Serves: 1  to 2 (approximately)

Ingredients:
Curd / youghurt - 1½ cup
Mint leaves - 
½ cup
Cumin powder - 1 tsp
Salt - to taste 
Black salt - 
½ tsp(optional)
Ice cubes

Directions:

Add Mint leaves, cumin seeds and 1 or 2 tbsp of yogurt / curd in a mixer. Grind it to make a paste. 


Add the remaining curd , black salt(if using), ice cubes and salt.  Blend it once again.

Pour it in a glass and serve!   Slruppp!

Pudina Thogayal (thuvaiyal) / Mint Thogayal (without coconut)

This is a very simple but tasty & flavorful thogayal recipe using mint as a main ingredient. Though I used to prepare mint chutney often, thogayal is new to me.  I learnt this recipe from my friend Latha Balaji.  It goes well as an accompaniment for rice and with idli, dosa as well!

Recipe for Pudina Thogayal / Mint Thogayal
Recipe type: Side dish
Cuisine: South India
Serves: 2 to 3 (approximately)

Ingredients:

Mint Leaves - 1 bunch / 1 cup tightly packed
Urad dhal - 2 tbsp
Red chillies - 3 to 4
Tamarind - a small piece
Asafoetida - a pinch

Salt - to taste
Oil - 1 tbsp(preferably sesame oil)

Mint Rasam / Pudina Rasam

This fresh and aromatic mint flavored rasam is slightly different from normal Instant rasam preparation but i am sure you all are going like this!

Mint Chutney / Pudina Chutney / Side Dish for Idli / Dosa

This spicy and aromatic chutney is very easy to make  and perfect accompaniment for idli, dosa varieties. One of my favourite chutney too..


Ingredients;

Onion - 1
Tomato - 1
Tamarind -  Small piece
Red chillies - 5
Mint leaves - 2 handful
Grated Coconut – ½ cup
Asafoetida (perungayam) – a pinch
Urad dhal – 1 tsp
Channa dhal – 2  tsp
Salt - as required


For Seasoning:
Oil – as required
Mustard seeds – 1 tsp
Curry leaves – 1 sprig

Directions:

Heat oil in a pan; add urad dhal and channa dhal.

When the colour changes to golden brown, start adding red chillies, onion and tamarind one after another. Saute for few seconds.

After that add tomatoes and salt. Cook until tomatoes become soft. At last add mint leaves and mix.

Remove pan from the stove and allow it to cool. 

Take a blender or mixie add tomato mixture and coconut  along with water(Adjust the water quantity according to the desired consistency); grind it into a fine paste. 

Transfer the chutney into a serving bowl.

Take another pan, add oil and temper with mustard seeds and curry leaves; pour it over the chutney.

Give it a mix and serve.

Note:

If you don’t want to add coconut, you may skip that step!
