Soya Manchurian / Soya Chunks Manchurian / Meal Maker Manchurian

Try this Indo - Chinese Manchurian recipe using Soya chunks as the main ingredient.  Soya chunks is high in protein and low in cholesterol; an excellent substitute for meat based proteins. 

Actually I have tried many Indian style recipes using Soya, especially cutlets, kurma, biriyani etc... but this is the first time I tried using Chinese flavors.  It came out very tasty. 

Here I have given both the version of Manchurian dry and gravy. Give it a try and feel free to write your feedback.

Recipe for Soya chunks Manchurian
Recipe type: Veg accompaniment
Cuisine: Indo - Chinese 
Serves: 3 to 4

Ingredients:
Soya chunks - 20 to 25 piece(approximately (150 gms)
Corn flour – 2 tbsp
All purpose flour - 1 tbsp
White or black pepper powder – 1 or 2 tsp
Salt - to taste
Oil  - 1 to 2 tbsp


For Sautéing:
Onion – 1 (chopped)
Capsicum - 1 small (cut into cubes)
Green chillies – 2 (finely chopped)
Ginger - 1 inch piece (finely chopped)
Garlic - 6 to 7 cloves (finely chopped)
Spring onion – 1 to 2 sprigs finely chopped
Soya sauce -  1 or 2 tbsp tbsp
Tomato sauce – 2 tbsp

Chilli sauce / Red chilli powder - 1 tsp
White or black pepper powder – 1  tsp
Salt - to taste
Water - to prepare batter
Oil – 1 tbsp

Soya Chunks biriyani / Meal maker biriyani - South Indian Style

Try this healthy and flavourful biriyani using Soya chunks / Meal maker.  I am sure it will be a delightful treat for vegetarians!

Soya chunks is a rich source of protein and also low in cholesterol when compared to to animal proteins.   It  is also a good source of amino acids, vitamin and minerals.

Though it has many nutritional benefits, moderation is advised due to its high protein content.

Ingredients:

Basmati rice - 2 cups
Soya chunks - 1 ½ cup 
Onion - 1 big
Tomato – 1 big

Ginger garlic paste - 1 tbsp
Corriander leaves – less than ½ bunch
Mint leaves – less than ½ bunch
Red chilly powder – 1 to 1½ tsp
Thick Coconut milk - 1 cup + 3 cups water
Salt – to taste

For Seasoning:
Ghee – 1 or 2 tsp
Oil – 2 tsp
Bay leaf – 1
Cinnamon – 1 small piece
Cloves - 2 or 3
Cardamom – 1
Cashew nuts - 10

Soya Potato Curry / Soya Masala Kulambu / Meal Maker Kulambu

This South Indian style Soya curry is very healthy and also easy to prepare dish. A perfect accompaniment with rice and rotis. You can also try this using soya keema and check also my other Soya recipes.


Serves - 4 to 5 persons

Ingredients:

Soya nuggets / Meal maker - 20 to 25 no.
Potato - 1 (peeled and cut into bite size pieces)
Onion - 1 (finely chopped)
Red chilli powder - 1 tsp
Coriander powder - 1 ½ tsp
Mint leaves - 1 tbsp
Salt - to taste

To Grind:
Ginger - 1 " ipiece
Garlic - 4 to 5 cloves
Tomato - 1 medium sized
Cashew nuts - 4 to 5 no
Coconut - ½ cup
Fennel seeds - ½ tsp

For Seasoning:
Bay leaf - 1
Cinnamon - 1

Curry leaves - 1 sprig
Oil - 1 tbsp

Soya Keema Matar ( Soya Nuggets / Meal Maker cooked with Green Peas)


A perfect vegetarian accompaniment for chapathi or roti; which is high in protein, low in calories and tasty too.



Ingredients:


Soya Nuggets - 100 grams
Fresh or frozen green peas - ½ cup
Onion - 1 (big) 
Tomato - 1(big) 
Ginger garlic paste - 2 tsp 
Red chilli powder - 1 to 1 1/2 tsp 
Corriander powder- 2 tsp 
Garam masala powder - 1/2 to 1 tsp
Salt - to taste 
Coriander leaves - 1 tbsp (finely chopped) 

For Seasoning :
Oil or butter - 2 tbsp
Cumin seeds - 1 tsp

Directions:

Pre - preparation :


Soak soya chunks in hot water for about 20 minutes or till it becomes soft.

Wash 2 to 3 times and squeeze the water completely.


Add the soya nuggets in mixer and mince or shred; keep aside.

Finely chop the onion and tomato. Keep aside.

Preparation: 

Heat oil in a pan ; season it with cumin seeds.  

Add finely chopped onion; Saute till the colour changes after that add ginger garlic paste, red chilli powder and corriander powder.

Fry in a medium flame for a minute (If you think it is sticking to the pan add little water) and add tomato with salt.

Saute till tomato becomes soft.  




Now add the peas; mix well and add ½ cup of water. allow to boi to 2 to 3 minutes.


add the minced soya chunks and garam masala powder. Add water to adjust consistency. (approximately 1 cup)

Close the pan with a lid and cook in a low flame for 10 minutes till the soya is cooked and oil separates.


Garnish with coriander leaves and serve hot with any Indian flat breads (roti, chapathi...) or use as a filling for Sandwich.



Note:

If you are using dried peas, soak it overnight for nearly 7 to 8 hours and pressure cook the peas adding salt and water and add this to the gravy.

Adjust the water quantity and spice level according to your taste.

Soya 65 / Meal Maker 65 / Soya Chunks Fry

Here is a famous Indian starter recipe with a twist for vegetarians using Soya chunks!

You can have this tasty, crunchy Soya-65 as a snack or side-dish for meals. Try this and give your feedback.







Ingredients:

Soya / Meal Maker - 1 cup (heaped) Corn flour - 2 tbsp Rice flour - 1 ½ tbsp Ginger garlic paste – 2 tsp Turmeric powder – ¼ tsp Red chilli powder – 1 ½ to 2 tsp Garam masala – ¾ tsp Yoghurt – 1 tbsp Lemon – ½ slice Curry leaves - 1 or 2 sprig Salt - to taste Oil - for deep frying Note: You may adjust salt and spice levels to suit you; add food colour if you prefer.

Directions:

Soak soya chunks in hot water for about 20 minutes or till it becomes soft.

Wash 2 to 3 times and squeeze the water completely.

Marinate soya chunks with 
turmeric powder, red chilli powder, ginger garlic paste, garam masala, yogurt, lemon juice and salt for 20 to 30 minutes.

Now add cornflour and rice flour; mix well.

Heat oil in a kadai and deep fry them in medium flame till it reaches golden brown colour.

                Your tasty snack is ready to munch on!

Note:

Adjust the spice level according to your taste.

Soya Chunks Cutlets / Meal Maker Cutlets

Here is an excellent way to sneak in protein and calcium packed soya chunks in your diet in the form of healthy & delicious Soya Cutlets - as a snack or an appetizer!

Soya chunks are processed from soyabeans that make them more digestible and palatable.  They are a rich source of vegetarian protein, vitamin A, vitamin B12 and iron also serves as a great substitute for meat.




Yield : 12 medium sized cutlets (approx.) 

Ingredients:

Soya Chunks / Meal maker   – 2 cups
Potato – 2 medium sized (boiled and mashed)
Onion – 1 big (finely chopped)
Pepper powder – ½ tsp
Red chilli powder – 1  tsp (adjust to suit your spice needs)
Coriander powder -  ½ tsp
Turmeric powder – ¼ tsp
Garam masala powder- 3/4 tsp
Tomato sauce – 1 tsp
Coriander Leaves  – 1 tbsp (finely chopped)
Salt - to taste
Oil - 1 tbsp

To Grind:  

Ginger -1“ piece 
Garlic - 5 to 6 pods
Green chillies – 1 or 2

Others:
Oil – for deep frying
Bread crumbs – 1
½  to 2 cups
All purpose flour / Corn flour - 2 table spoon

Directions:

Soak soya chunks in water for nearly 20 minutes or till it becomes soft.

After that squeeze the excess water.  Wash at least 2 to 3 times and squeeze completely.

Mince that using mixer / blender and keep aside.

Heat oil in a pan; add the finely chopped onions and saute till the colour changes.

Then, add grounded paste; Saute for a minute and add the minced soya chunks along with all the spice powders and salt.  Mix well.

Sprinkle little water and close the pan with the lid; allow to cook for 5 minutes in medium flame.

Once it is done, add tomato sauce, coriander leaves and mashed potatoes. Fry for a second and turn of the stove (make sure there is no moisture in this mixture).

Transfer this mixture into a bowl and mix well (
add little breadcrumbs to reduce the water content in the potato soya mixture, if needed).

Taste at this stage to add anything, if you need.  Roll the mixture and shape the pieces as you like.





Take a separate bowl;  mix all purpose flour / cornflour and water to a batter consistency (this batter should neither be thick nor thin).

Now dip the shaped cutlets in flour mixture and roll in the bread crumbs.

Deep fry it in oil, till both the sides turn golden brown in medium flame.


To make it a low calorie snack, shallow fry that. Repeat the same for other cutlets.

Serve hot with tomato ketchup or mint chutney.


Note:

You may replace egg for coating instead of cornflour / all purpose flour.


Add veggies like carrot, peas, etc., to increase the nutritive value.

You can also prepare the mixture and keep it ready in the refrigerator (but not more than a day) so that you can just take it out and fry to treat your guests with a hot snack.
