Vegetable & Egg Masala Sandwich

Sandwiches are the best means to make childrens eat vegetables and also suitable for picnics and lunch boxes.  Here is the healthy sandwich for you all to relish!
 

Ingredients

Wheat Bread - 6
Onion – 1 medium
Carrot - 1 small (grated)
Capsicum – ½ (finely chopped)
Cabbage – 1cup (chopped)
Ginger garlic – 1 tsp (minced)
Redchilli powder – 1 tsp
Garam masala- ½ tsp
Coriander leaves - 1 or 2 tsp (chopped)
Tomato sauce - 2 tsp
Egg -1
Oil - 2 tsp
Salt - to taste
Butter – to toast

Directions:

Heat oil in a pan; add onions and sauté well till it turns translucent.
Then add minced ginger and garlic. Sauté well.

Once it is done add the vegetables, salt, spice powders and tomato sauce. Allow to cook in a medium flame adding very little water.

When the vegetable mixture is cooked and become thick, break the eggs into the center of the pan and slowly mix in the veg mixture till it is blended well and cooked.  Garnish with coriander leaves .

Toast the bread using butter.  Spread the veg mixture on one slice and cover it with the other.

Cut the sandwich into half and it is ready to serve.

Note:
Instead of egg, vegetarians can try using paneer, but remember to grate and use.
