Healthy Breakfast Muffins

This nutritious and tasty muffins are perfect way to start the day!  As a mom I feel very satisfied when I send this muffins for my kids lunch box as it has wheat flour, oats, carrots, orange, bananas and dry fruits. I have adapted the recipe from Marthastewart.com and made slight changes according my preference.

Recipe for Healthy Breakfast Muffins
Recipe type: Baked Goodies
Cuisine: Western
Serves: 10 to 12 muffins approximately

Ingredients:
Whole wheat flour  – 1 cup
All purpose flour - ½ cup
Oats -  1 cup
Vegetable oil / olive oil  - ½ cup
Dark brown sugar - ½ cup
Vanilla essence - 1 tsp
Cinnamon powder -  ½ tsp
Raisins - ¼ cup
Baking powder - ½ tsp
Baking soda - ½ tsp
Salt - ¼ tsp
Egg - 1
Milk - ½ cup 
Carrots(small) - 2 (grated)
Banana - 1 (mashed)
Orange jiuce - ½ cup

Directions:

Preheat oven to 180 deg C.  Grease the muffin cups or line with muffin papers.

Take all the dry ingredients (oats, all purpose flour, wheat flour, brown sugar, salt, cinnamon powder, baking powder, baking soda) in a bowl.  Mix well.

Next add in milk, oil, vanilla essence, grated carrots, orange juice, mashed bananas and raisins (reserve some for topping). Stir till it blends well.

But don’t over mix as this will make the muffins heavy.

Fill the mixture into the muffin cups using a spoon, about three quarters full.(Sprinkle the top of the muffins with remaining raisins)

Bake at 180 deg C for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.

Remove the pan from the oven and let it cool for 5 to 10 minutes; now transfer the muffins with their paper cups to a wire rack.




Your healthy and filling /Muffins is ready to munch on!

Notes:

Feel free to substiute any of your favourite fruits (chopped apples, blueberry, strawberry etc..) and nuts.

  3. No need to powder geeth. You can also sprinkle oats on top of the muffins along with raisins.
