Beetroot Poriyal / Beetroot Stir Fry

Beetroot Poriyal is an easy to make, healthy stir fry that can be served as an accompaniment to rice.


Ingredients:

Beet root - 1 (big)
Onion - 1 (finely chopped)
Green chillies - 2 to 3 (slited lengthwise)
Red chilli powder - ¼ to ½  tsp (adjust according to your taste)
Salt - to taste
Grated coconut - 1 to 2 tbsp

For Seasoning:

Oil - 2 to 3 tsp
Mustard seeds - 1 tsp
Urad dhal - ½ tsp
channa dhal - ¾ tsp
Curry leaves - 1 sprig

Directions:

Wash, peel the skin and chop the beetroot to bite sized pieces. Keep aside.

Heat oil in a kadai; add all the ingredients under "For seasoning" one by one.

After it crackles, add chopped onion and green chilli. Fry till onion becomes translucent.

Now add chopped beetroot, salt and water (just to immerse the beetroot). Give it a mix.

Close the pan with a lid and cook till the beetroot becomes soft and water dries up.

Sprinkle grated coconut and give it a thorough mix; Beetroot Poriyal is now ready to serve!


Note:

You can also grate the beetroot instead of chopping. 

Use of chilli powder is optional.

  3. I prepare it the same way.When I grate it I add curd to it once it is done and cool.Beetroot pachidi..tastes good.Children love the colour.
