Carrot Kheer / Payasam

Carrot Kheer is a tasty, healthy and nutritious stuff.  I prefer this as a dessert for get-togethers / parties at home. 


Carrot - 6 medium
Milk -1 litre
Almonds / Badam - 8 nos.
Sugar - 1 cup (adjust according to your taste bud)
Cardamom - 1 tsp
Chopped cashew nuts - few for garnishing


Blanch and peel the skin of almonds. keep aside.

Wash the carrots and cut into pieces; pressure cook by adding little milk for 2 to 3 whistles.

Cool down the carrots to room temperature and grind it with the blanched almonds.

Take a deep vessel, pour the milk and boil.

Allow to boil for 10 to 15 minutes in a medium flame.  After that add in the ground carrot almond paste, cardamom powder and sugar.

Reduce the flame and cook for some more time till the sugar melts. Remove from flame .

Garnish with cashews before serving.

Serve hot or cold as per your choice.


If you are using condensed milk; reduce the amount of sugar and continue the process.
