Green Gram Sprouts Salad / Moong Sprouts Salad

Green Gram Sprouts Salad is a nutrient dense salad added with cucumber, carrots, onion, tomato along with spices to improve the taste.  As this is delicious & low calorie salad, You can eat this to your stomach's content and feel full without guilty.

Recipe for Green Gram Sprouts Salad
Recipe type: Salad
Cuisine: Indian
Serves: 2 to 3 (approximately)

Ingredients:

Home made Green gram sprouts - 1 to 1½ cup
Onion - ½ portion of one medium seized (finely chopped)
Tomato - 1 small (chopped)
Cucumber - 1 small cucumber (finely chopped)
Carrot - 1 or 2 tbsp(grated)
Coriander leaves - 1 or 2 tbsp finely chopped
Lemon juice - from 1 lemon
Chat masala - ½ tsp
Pepper - as required

Salt - as required

Kerala Style Raw Papaya Stir Fry / Green Papaya Thoran / Omakka Thoran


































Raw(green)papaya / Omakka (in Malayalam) / Papalikkai (in Tamil) is a rich source of dietary fibre, in addition to Potassium, Vitamin A, Vitamin C and Folate.

Regular consumption of this nutritious vegetable will be helpful in reducing the risk of heart disease, diabetes, cancer and digestive tract disorders. 

Though we eat papaya fruit regularly since childhood, raw papaya as a vegetable and that it can be cooked as a tasty & healthy dish is something non known to many. 

Raw papaya is crunchy and tastes more like cabbage.

Ingredients:
Raw papaya - 1 small
Onion - 1(finely shopped)
Salt - as required

To grind:
Grated coconut - ¼ to ½ cup
garlic - 2 to 3
Cumin seeds - ½ tsp
Turmeric powder - ¼ tsp
Red chilli powder - 1 tsp

For seasoning:
Coconut oil - 2 to 3 tsp
Mustard seeds - ½ tsp
Urad dhal - 1 tsp
Curry leaves - 1 or 2 sprigs

Black Eye Bean Sweet Sundal / Karamani Sweet Sundal / Karamani Vella Sundal - Navarathiri Recipes

Black Eye Bean Sweet Sundal is one of the "easy to make" recipes and a favourite of mine. For those who have seen my previous post of Green Gram Sweet sundal, here is a variation of seasoning with red chillies. Try this; you will like the mild spice taste along with sweet.

Black eye bean / Karamani (in tamil) is a nutritious legume especially high in fibre and rich in B-vitamins. Include in your diet for a healthy living.

Recipe for Black Eye Bean Sweet Sundal
Recipe type: Snacks
Cuisine: Tamilnadu
Serves: 3 to 4 (approximately)

Ingredients:

Black eye bean / Karamani - 1 cup
Jaggery – ½ to ¾ cup

Grated Coconut - 2 to 3 tbsp
Cardamom powder- 1 tsp(optional)
Salt - to taste

For Seasoning:
Oil - 2 to 3 tsp
Mustard seeds - ½ tsp
Red chillies - 2
Curry leaves - few
