Wheat Dosa / சம்பா ரவை தோசை

Here is a healthy & tasty, aromatic wheat dosa.  It tastes better when served hot and perfect diet for diabetic people!

Ingredients:

Broken Wheat (bigger variety) – 2  cups
Urad dhal – 2 tbsp
Fenugreek seeds – 1 tsp

Red chillies - 3 to 4 
Cumin seeds - 1 tsp
Curry leaves - 5 to 6 leaves
Asafoetida - a pinch
Salt – to taste

Strawberry Cooler / Strawberry Juice - Summer Special

Try this refreshing and delicious drink using strawberries, lemon juice and ginger ale / soda.


Ingredients:

Strawberries - 1 to 1
½  cup
Water - 1 cup (to dilute)
Sugar - 2 tbsp
Lemon juice - ¼ cup
Ginger ale / soda - ¼ to ½ cup

Dum Ka Chicken / Hyderabadi Dum Ka Murgh

Dum ka Murgh / Chicken is a very aromatic and also a popular hyderabadi special recipe; prepared using chicken, many aromatic spices, cashews / almonds paste, curd and fried onions; slow cooked in "Dum Style".

I have adapted this recipe from the famous chef Vahrehvah. This gravy is easy to cook and so delicious with the mild sour taste of yogurt.

This suits well with any flavored rice or with any Indian flat bread.

Ingredients:

Chicken - 800 grams to 1 kg (cleaned and cut)
Curd - 1 cup, well beaten
Onion - 2 (sliced lengthwise)
Green chilli - 5 to 6 ( chopped into small pieces)
Ginger garlic paste - 1 tbsp
Shah jeera - ½ tsp 

Turmeric powder - ½ tsp 
Kashmiri red chili powder - 1 to 1½ tsp 
Corriander powder - 1 tbsp 
Cumin powder - ½ tsp 
Cinnamon - 2 to 3 pieces
Cloves - 5 to 6
Cardamom - 3 to 4
Mint leaves - 2 tbsp(chopped)
Coriander leaves - 2 tbsp(chopped) 

Oil - 2 to 3 tbsp
Whole wheat or atta dough - to seal the pan

To Grind:
Cashew nuts or Almonds - ¼ cup

Pumpkin Sambar / பரங்கிக்காய் சாம்பார்

Sambar is a popular and traditional South Indian accompaniment for rice or Idli / Dosa. It is prepared using dhal (lentils), vegetables of your choice, sambar powder, tamarind and spices.


In this recipe, I have used Pumpkin which gives a mild sweetness and unique taste to this dish.

Though I prepare sambar at least twice every week; Its only now I could post this!

Do try this; enjoy with hot rice or as a side dish for any South Indian breakfast item.



Ingredients:

Toor Dahl / Tuvar Dhal / Thuvaram paruppu - ½ cup
Pumpkin -  1 cup ( chopped pieces)
Big Onion - 1 / Small onion - 10 (Chopped)
Tomato - 1 (finely chopped)

Green chillies - 2
Tamarind - a small gooseberry size
Sambar Powder - 1- 1
½ tsp
Asafoetida - a pinch
Salt - to taste

For Seasoning:
Mustard seeds - ½ tsp
Urad dhal - 
½ tsp 
Fenugreek seeds - ¼ tsp
Curry Leaves - 1 sprig (optional)

Amla Ginger Juice / Gooseberry Ginger Juice / Nellikai Juice - Summer Special

Amla is very rich in vitamin C, also rich in other minerals and vitamins.


Here I have added ginger and honey with amla to prepare this healthy juice; perfect combination to cure sore throat and cough. 

Daily consumption of this juice has its own benefits interms of prevention and cure of many illnesses.



Ingredients:

Big Amla / Gooseberry - 2 (De - seeded)
Ginger - 1 " piece ( chopped)

Honey / Sugar - to taste
Lemon juice - 1 or 2 tbsp (optional)
Water -  to dilute

Chow Chow / Chayote Chutney - Side Dish for Idli / Dosa

Here is a tasty & healthy chutney using vegetable (Chow Chow / Chayote ) as a main ingredient.


As my other chutney varieties using vegetable; this also become a favorite of my family.

Ingredients:

Chow Chow - 1 small
Onion - 1
Tomato - 1 

Channa dhal - 1 ½ tsp
Urad dal - 2 tsp
Red chill - 2
Green chilli - 2
Tamarind - a small piece
Coriander leaves - 2 tbsp (finely chopped)
Oil - 2 tsp

For Seasoning:
Mustard - ½ tsp
Hing ( asafoetida) - a generous pinch
Curry leaves - 1 sprig
Oil - 1 tsp

Tomato gravy (without coconut) / Side dish For Idli / Dosa

Here is a tasty, low - calorie gravy that goes well with South Indian breakfast varieties, such as Idli, Dosa and Uttappam; suitable as an accompaniment for chapathi, as well!



Ingredients:

Onion - 1 (chopped)
Tomato - 2 to 3
Green chillies - 2
Turmeric powder - ¼ tsp 
Red chilli powder - ½ tsp 
Bengal gram flour / Kadalai Mavu - 1 to 2 tbsp 
Curry leaves - 1 sprig 
Salt - to taste 

For Seasoning:
Oil - 1 tbsp 
Mustard - ¼ tsp 
Jeera / Cumin seeds - ½ tsp

Baked Date & Chocolate Rolls / Breads (Eggless)

Here is a healthy, soft Bread Roll / Braided Bread stuffed with tuitty fruity, chocolate chips and dates (you can also add nuts with this).

Preparing bread at home is quite interesting and easy; even beginners can try this without second thought. I have adapted the recipe from Treat n Trick, one of the famous blogs for baked goodies. 

Actually this recipe is given for Bread Roll, but I also tried the Braided Bread, out of my interest and it came out very well. Every one liked it as well.
