Pal Halwa / Milk Halwa

To start the new year, here I have shared a sweet recipe "Milk Halwa" with you all. 

I learnt this recipe from my friend Lakshmi Krishna. This is one of her trademark recipes. Every body in my family, love this sweet. 

Try this with your loved ones to welcome the new year with the essence of this sweet, which is purity in thoughts and sweetness in words.


Serves - 5 to 6 people approximately

Ingredients:

Full cream milk - 2 litres
Sugar - 250 grams
Lemon juice - 2 to 3 tsp
Refined oil - 100ml
Ghee / Clarified butter - 50 gms
Rice flour - 3 tbsp
Cardamom powder - ¼ tsp (optional)
Sliced almonds - 2 to 3 (optional)


Directions:

Take a thick bottomed wide vessel; add the milk and allow to boil.


Once it is boiled, add lemon juice.  It will start to curdle very lightly, not like we do for paneer.

Allow to boil in medium flame, till the milk reduces to ¼ in volume and looks semi thick in consistency; while stirring occasionally ( it takes nearly 30 to 40 minutes)

(Remember to keep scraping the sides of the vessel when cooking, as it will make the halwa thick and grainy )

Now add sugar and cardamom powder (if using).

Allow to cook for another 5 to 10 minutes or till the sugar melts.

Once it is done, add ghee and oil and mix well.

After that add rice flour, simultaneously stir to avoid lumps.  The mixture will start to thicken and will start to leave the sides of the pan.   Switch off the gas.

Now your heavenly Milk halwa is ready to serve.

Note:

Once it cooled it tends to thicken more and taste delicious.


Adjust the sugar quantity according to your taste.
