Avocado Ice cream / Eggless Avocado Ice cream

Here is refreshing fruit based Ice cream, perfect to beat the heat!  Two special things about this Ice cream is that it is egg- free and it is prepared without use of Ice cream machine. This  recipe is adapted from Alton Brown.

Try this smooth and healthy fruit based ice cream for dessert! I am sure you will enjoy this.


Ingredients:

Avocados - 2
Lemon juice - 1 tbsp
Full fat milk - 1½ cup
Sugar - ½ to ¾ cup
Heavy cream - 1 cup


Directions:

Using a knife; halve the avocado and remove the seed.

Scoop the flesh and add it to the blender along with lemon juice, sugar, milk and grind it.

Once it done, transfer to a separate bowl, add in cream and beat well using a hand beater.

Transfer to the mixture to the freezer proof box and place it in the freezer for 6-8 hours.


For smoother texture, at least 2 to 3 times, you need to take box out and mix well to remove the ice crystals which is forming on the top and edges of the ice cream.

Once it is firm, Serve as it is or top it with nuts or chocolate sauce!
Note:

You can also try adding honey instead of sugar.

If the ice cream becomes too hard, place in the refrigerator to soften for about 30 minutes before serving.
