Broken (cracked) Wheat Veg Briyani / Samba Rava Briyani / Godhuma Rava Briyani / சம்பா ரவை பிரியாணி

Broken wheat is a healthy alternative for almost all the recipes with rice. It is rich in fiber content and a boon for health conscious people, particularly the diabetic patients.

Here is a health friendly treat using broken wheat for Briyani lovers!!!!

Ingredients:

Broken wheat rava - 2 cups ( fine variety)
Onion - 1( sliced lengthwise)
Tomato – 1 (finely chopped)
Mixed vegetables - 1 ½ - 2 cups( carrots, beans, cauliflower, fresh peas)
Ginger garlic paste - 1 tbsp
Coriander leaves - less than ½ bunch
Mint leaves - less than ½ bunch
Red chilli powder - ¾ tsp
Salt - to taste
Lemon juice – 2 tsp (optional) 


For seasoning: 
Oil – 1 tbsp 
Ghee - 2 tsp 
Bay leaf – 1 
Cinnamon – 1 small piece 
Cloves - 2 or 3 
Cardamom – 1




Directions:

Wash the broken wheat and keep aside.

Cut carrots,beans, cauliflower into bite sized pieces and keep aside.

Take a pressure cooker; add oil and ghee, after it becomes hot add bay leaf and season it with cinnamon, cloves and cardamom.

Once it crackles; add the onions.  Saute well, till it is translucent.

Add ginger garlic paste and fry.  After that add green chillies, chopped tomatoes and salt; sauté till tomatoes become soft.

Next, add spice powders, curd and sauté for a minute.



Add mint leaves, coriander leaves, fry for a one or two second; after that add all the vegetables and give it a mix.



Now add the washed broken wheat. Give a quick mix and add 4 cups of water; allow to boil.

Check for salt and spice (if you feel spice is more, add lemon juice to reduce it).

Keep stirring, when the mixture becomes slightly thick in consistency, close the cooker with the lid. 

After the second whistle simmer for five minutes and switch off the gas.




Serve hot with onion raita.




Note:

Amount of water and cooking time will vary according to variety or quality of broken wheat.

Diabetic patients can avoid ghee and continue the process.

If you are using dried peas, soak overnight and pressure cook till it becomes soft.
