Carrot Date Cake

This moist spice cake is easy to make and packed full of nutrition. Great for snacking at any time of the day.


All purpose flour – 1 ½ cup
Vegetable Oil - 1 cup
Brown sugar – 1 cup
Eggs -3 (beaten)
Cinnamon powder - 1 ½ tsp
Grated carrots - 2 cups
Salt – a pinch
Baking Powder – 1 tsp
Chopped Walnuts – ½ cup
Deseeded Dates – ½ cup


Preheat the oven at 180C

Grease the cake tin.

Sift together flour, cinnamon powder, baking powder and salt.

Mix together grated carrots, brown sugar, oil, nuts, dates and eggs in a large bowl. Now add the sifted flour mixture to it and mix thoroughly.

Pour the cake batter into the greased cake tin and bake on preheated oven at 180 C for 25 – 30 minutes or until a toothpick inserted into the center of the cake comes out clean.

Remove from oven and leave it in the baking tin itself for 15 minutes.

Allow it to cool before slicing and then serve.
